Finding new ways to eat low carb can be super challenging. This bowl of nourishing ingredients is a great way to get in part of your daily intake of veggies.
This recipe can be tailored to your taste buds, so if you don’t like a certain vegetable that’s in it, you can easily swap it with another of your choice.
It’s always fun to get creative with food, and I believe there’s this inner child in all of us still that still loves to eat food that’s visually appealing to us.

They are super easy to meal prep and if you do prefer to add more protein to this particular recipe, you can easily cook up some chicken thighs or breasts and also add some spinach.
Finding ways to make a meal high protein usually doesn’t take to much work. For those girls out there who do prefer to count macros this meal probably would need an extra boost of protein sources which is why I recommend the foods above.

While making this recipe for lunch today, I may have used a pan that was just a tad too small for this recipe, luckily what fell overboard and onto the ground is always there to be picked up by my furbaby Gunner.
That’s definitely one of the great benefits of having a dog inside, minus the hair of course, but they do make great vacuum cleaners. As long as it’s food of course.
Low carb Mushroom Cauliflower Rice
- 1 bag cauliflower rice
- 1/2 cup green onions
- 2 tbsp fresh parsley
- 2 cups mushrooms
- 1 cup diced celery
- 1/3 cup vegtable broth
- 1 tbsp coconut oil
- 2 cloves minced garlic
Start by dicing and slicing, celery, parsley, mushrooms and green onion
In a medium to large-sized pan add 1 tbsp coconut oil over medium heat.
Add both green onion, garlic, and celery to the pan, saute and stirring for 5-7 minutes.
Add cauliflower rice and vegetable broth stirring it for 5 minutes, before it gets to the mushy stage. Top off with fresh parsley and serve when hot and fresh.
You can purchase bags of cauliflower rice at Whole Foods or Costco.
If you do want to make the cauliflower rice from scratch, simply wash and cut cauliflower into small pieces. Add to a food processor until cauliflower looks rice size.
