A colorful winter berry pecan salad is just the thing you need this season. Who say’s salads have to taste boring and bland. This salad has a colorful variety of toppings your sure to love.
Winter Berry Salad
Another day another beautiful salad. Salads are the easiest way to get in all of your greens when you have these tasty toppings to add on top.
Your salads are only as good as your topping. Unless of course your one of those people that can eat straight kale or spinach. I want to be you!
This winter berry pecan salad is super easy to make and even easier to prep so you have it for the days ahead.
If you’re planning on prepping the salad I recommend getting some jars out and simply putting your toppings on the bottom.
Include your favorite berries next, for this salad I chose blueberries and strawberries. I also added pecans, goat cheese and of course a good source of protein, for this salad it was chicken.
I prepped a good amount of chicken in advance so I can throw it on top of my salad for the day’s a head where I don’t have extra time to cook chicken.
Of course, you could put the dressing on the bottom of the jar but I love having a salad taste as fresh as possible, so I would recommend you bring a separate container for your dressing.
Speaking of the dressing, this salad tops off with a super delicious balsamic vinaigrette made from scratch.
Of course, if you’re short on time you could always purchase one and drizzle it over-top.
This salad makes it hard not to want to eat a salad at least once a day. Even for the kids or roommates that say they don’t particularly love greens.
Give it a try! I promise you you’ll fall in love with it!
