First, you’ll wash and slice zucchini in half, add to pan, drizzle with olive oil and bake at 350 F for 10 minutes. Afterward, they have cooled you can carve out the middle with a spoon creating a boatlike look to add the rest of the ingredients.
The turkey is simply seasoned with salt and pepper until cooked to the perfect color. Finally, the best part of the recipe, the chopped bell pepper, and garlic, along with the Italian seasonings that give it that extra boost of flavor.

Turkey Zucchini Veggie Boat
- 1 bell pepper
- 1 handful shredded cheese optional
- 1 tsp Italian seasoning
- salt and pepper
- 1 lbs lean ground turkey
- 4 zucchini
- 1 clove minced garlic
- 2 tbsp olive oil
Preheat oven to 350 F
Wash, and slice zucchini in half. Add 1 tbsp olive oil and bake for 10 minutes.
Dice bell pepper and minced garlic add to a 1 tbsp olive oil in a medium-sized pan and bring to medium-high heat.
Add ground turkey and season with salt and pepper, cook through until done
Remove zucchini from oven, let cool and carve out the middle, shaping the zucchini boats. Add your ground turkey veggie mix and top off with a sprinkle of cheese. Serve hot and fresh
