Southwest Chicken Clean Salad with a homemade dressing
- 3 Chicken breast
- 1 cup corn
- 1 cup organic black beans
- 2 cups lettuce
- 1 cup cherry tomatoes
- 1/2 cup red onion
- 1 whole avocado
- 1 tbsp olive oil
Southwest Salad Dressing
- 1 cup plain greek yogurt
- 1/2 tsp honey
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp chill powder
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1/8 tsp cayenne powder
- 1/4 tsp salt
With your thaw chicken breast, cut into strips and add them to a medium sized pan. Add one tbsp olive oil and cook for 8 minutes or until done.
In a medium-sized bowl, add cooked corn, black beans, shredded lettuce, diced avocado, tomatoes, diced red onion and mix well.
Add southwest dressing, mix and serve immediately
In a food processor, add greek yogurt first followed by seasonings and mix super well.
