We all love quick dinners! This recipe is perfect for those nights where you need supper on the table ASAP.
I have made this recipe many times now and I still always go back to it! My husband and I love asparagus and if you don’t you can always substitute it for another veggie of choice.
If you’re looking for just the right lemon pepper seasoning I highly recommend checking the ingredient list before purchasing. Definitely, go for one with natural ingredients and usually one that doesn’t have a huge list of ingredients. Drizzling fresh lemon on top of the chicken is the best way to top off the chicken giving it that lemony flavor.
- Try to use room temperature chicken when possible! They cook more evenly and will save you time.
- You can substitute chicken breasts with thighs if you’d prefer that.
- If you aren’t a fan of asparagus then you can substitute it with another veggie such as zucchini, broccoli or green beans.
- Serving it hot over freshly cooked rice or cauliflower rice is the perfect way to finish off this course.
If you don’t love using the BBQ or its minus a zillion outside, you can definitely make this recipe inside in the oven. Just add all your ingredients to a pan covered with parchment paper. Bake at 350 degrees F for 15-20 minutes and done!

lemon chicken and asparagus
- 2 chicken breasts, boneless,skinless
- 1 tbsp olive oil
- 1/4 cup fresh lemon juice
- 1 tbsp lemon pepper seasoning
- 1 tsp black pepper
- 1/4 tsp salt to season
- 10-20 bunch asparagus
- 1 tsp minced garlic
- 3 tbsp unsalted butter
Lay two 12x12 inch squares of foil out. Place chicken breast in the center, drizzle them lightly with olive oil.
With the asparagus, trim about 2 inches off the ends and discard. Divide them between the foils
Thinly slice the lemon and lay slices on top of and underneath chicken and asparagus.
Stir together butter, garlic, and juice of lemon and lemon pepper seasoning. Brush over chicken and asparagus. Add salt and pepper on top of both chicken and asparagus.
Fold up the foil over top the chicken and asparagus closing it securely
Grill over medium-high heat for 8-10 minutes depending on the size of your chicken. You can also bake them for 20 minutes at 400 F. Serve when fresh and hot.
If you choose to use chicken thighs, you can use two per foil instead of one as they are generally smaller in size.
