Are you tired of eating the same old thing for dinner every week? Well, this easy healthy taco soup recipe is made for the lazy woman who wants to spice things up and have dinner on the table in less than 30 minutes!
Summer sadly is slowly turning into fall here in Manitoba. The air starts to get crisp and that just makes me crave all of the soups and warm cozy drinks.
The weather also happens to inspire me to create recipes that are good for our souls and for our health. So even though cooler seasons are coming in my opinion that never means we have to stop eating good food.
This recipe has minimal ingredients, which most of my recipes do because well cooking can be simple and still taste good. Also, who has time to spend in the grocery store searching hours and hours for ingredients that they can’t even pronounce.
So in light of that, this taco soup will have you wanting more, and if you double the recipe you can easily meal prep it for a couple lunches for the week as well.
Speaking of the recipe, let’s get to it. Now although, many of us love the crockpot and instant pot sometimes you sleep in a little too late in the morning and you don’t have time to fill it. So that’s why I created a recipe that just uses a good old-fashioned pot. Like my mom always likes to say, we never had any of those fancy tools and our food turned out great. I would, of course, agree with my mom as she is a fantastic cook.

Easy healthy taco soup
- 1 pound extra lean ground beef
- 1 can organic black beans
- 1 can diced tomatoes
- 1 cup sweet corn
- 1 1/2 cups beef broth
- 1 green bell pepper
- 2 garlic cloves diced
- 1/2 yellow onion
- 1 tsp oregeno
- 3 tbsp chili powder
- 1 tsp cumin,ground
- 1/2 tsp salt
To start, wash and cut up green bell pepper, garlic, and onion.
In a medium sized pot, over medium heat, add bell pepper, onion, and garlic.
Once cooked, add lean ground beef and cook thoroughly through until meat is no longer pink.
Add beef broth, oregano, chili powder, cumin, and salt. Followed by sweet corn, rinsed and drained black beans and diced tomatoes.
Cook on low to medium heat for the remaining 10 minutes and serve with fresh avocado, salsa, chips and, sour cream or %0 greek yogurt.
